A few days ago I wrote about the breakfast redesign we had in the Whitwer home a few years ago. I wanted to share a few ideas for a fast and nutritious breakfast that you and your kids will love. If it's a bread-based recipe, we always add fruit and other protein sources to round out the menu. I also cut back on fat whenever possible.

1. French toast - I use one egg per piece of bread. To the egg I add a little milk, cinnamon and vanilla. I use a small frying pan and put about 1 Tbsp. vegetable oil. That way the edges of the French toast crisp up.

2. Rolled pancake - Thin out regular pancake batter. Pour into one large circle on your griddle. About 8" across is manageable. Once pancake is cooked, spread one side with fruit preserve of your choice. Roll pancake and sprinkle with powdered sugar or whipped cream.

3. Breakfast burrito 0 We use any combination of eggs, meat and veggies - top with cheese and salsa and roll in a flour tortilla. When I get very adventurous, I use chorizo sausage - yum!

4. Deviled eggs - My kids love them and I figured it was a great way to get protein in them at breakfast.

5. Sausage in a biscuit - Purchase sausage links and cook. Make sure they are hot. Then make or purchase biscuits and flatten into a circle big enough to wrap the sausage. Then bake in the oven according to directions for the biscuit. Making sure the sausage is hot is the key, otherwise you have a gummy biscuit on the inside.

6. Scrambled eggs and bacon - For a quick fix, cut the bacon into small pieces then fry. Once completely cooked, add beaten eggs. This is fast because the bacon cooks quicker cut up.

7. Scotch Eggs - Hard boil your eggs. Wrap each egg with bulk sausage and then roll in bread crumbs. Fry eggs until sausage is completely cooked. This can be made up the night before and refrigerated.

8. Bagel sandwich - We create our own egg, ham and cheese sandwich using a store bought bagel. This just takes minutes when you toast the bagel and cook the eggs at the same time.

9. Biscuits and gravy - For my family of 7, we use about a pound of bulk sausage. When that's completely cooked, sprinkle with about a 1/4 to 1/2 cup of flour. Once the flour and sausage mixture has cooked for 3-4 minutes, pour in 1 to 2 cups of milk. Salt and pepper to taste. Bring to a boil over medium and stir with a whisk. This makes enough for us to have one biscuit with gravy each.

10. Fruit smoothie - We have tried various recipes and finally came up with one we love! Freeze one cup of berries - already cut up. Add frozen berries, one sliced banana, one cup skim milk and 2 or 3 teaspoons of sugar. Really. That's it.

Every one of these recipes I can make in under 15 minutes. One more suggestion - create a breakfast menu and post it on your fridge. Then purchase some of these ingredients and have them on hand. I find my mind goes blank in the mornings - especially before my second cup of coffee.

I had a friend know I was lonely and sent me The Prov. 31 devotionals. she did not know that God had been calling me, and I so needed to give back. So I am going to keep in touch for these 8 weeks. I am waiting every Friday morning. I ask YOU to email me if I do not comment.

I have been on the computer for years. I remember when we got a computer, my husband said the kids and I would never get online so we had to run the cord across the floor and plug it in every time we got onto AOL. Well, the cord ran across the kitchen for a very long time. Things change.

I am just learning about blogs. Now can you see my email address? in this comment? I have not figured out how to create my blog yet. I am working on it... Help!!

WooHoo Glynnis!!! Wow!!! A two and a half pound drop in one week is AMAZING!! I have to confess that I haven't lost any weight this week, but I'm happy not to have gained! :o) I'm on some medication right now that MUST be taken with food and so that has included a bedtime snack this past week which I normally NEVER do. I hope next week will be better.

As to my extra hour of prayer a day, I've been somewhat better. I was out of town on 3 different days this week, and I find that messes up my schedule. I did spend an hour in prayer 4 of the days. (This is in addition to my early morning devotional time each morning - which is non-negotiable!)

Thanks for helping to keep us accountable here and hopefully next weekend I'll be able to report a decline on the scales as well.

Awesome job on losing that poundage!! That is awesome you are sticking to it. It really motivates me to keep going on mine. Ive only lost 1 pound, but I did let myself celebrate over it: I bought a new book. Has fewer calories :)

Congratulations Glynnis. 2.5 pounds is awesome! I am using your challenge to keep myself accountable to writing. It didn't work last week but I have high hopes for this next week. I'm looking forward to seeing how much you lose this week. You go girl!

I read your original post about losing weight then got interrupted and never commented. But I kept thinking of you and the others and want to join in. I hope it's not too late?

I've been battling tarsel-tunnel syndrome (just like carpal-tunnel, only it's the ankles) and have been on enforced REST from exercise. After 25 years of walking 2 miles daily, it's been a frustrating time. Can you say "tight clothes"?

Thanks to custom orthotics, I'm slowly weaning myself back into my walks. And I'm with you!

I just found your blog. I'm with you. I desperately need to lose weight, and have needed to for a long time. My baby weight is not falling off and I needed to lose weight before that! I haven't weighed myself in a couple weeks because I get obsessed and depressed, but I'll jump on and report next week. This will help me stay accountable! Great way to do so!

Love the breakfast ideas and want to throw in a few that we have that are higher protein as well:

-Crepes- they use more eggs than pancakes. We fill ours with strawberries, bananas, blueberries and throw some homemade whipped cream and toasted almonds on top.

-Baked oatmeal. I have a flexible recipe that allows me to add fruit, flax seeds, wheat germ, nuts, etc...

-Sausage balls maded with Bisquick, sausage, and cheese.

-Breakfast pizza made with rolled out crescent rolls, sauasage or bacon, eggs, cheese, and hash browns.

-Peanut butter on anything- banana, apple, toast, English muffin...

I saw the picture of that yogurt parfait in your other post. I had one of these years ago at the Bellagio in Las Vegas and it was awesome. I make them at home, but the kind I like to make mimics the one from the Bellagio and it's made with homemade whipped cream and loaded with fat so it's a rare treat around here.

I just found your blog tonight, after my husband heard you on WBCL and called me from work to tell me to go to the computer and listen. I'm so thankful! Anyway, I have baby weight to lose, too, and would like to do so before my son turns 32 next February. Ha! NOT kidding. Anyway, I'm going to come back here tomorrow and read some more and join these other fine women in hearing about their walk with the Lord.
